225g/8oz Barkat Flour Mix
1 tsp Bicarbonate of soda
170mls/6 fl.oz Sour Milk or Buttermilk
Pinch of salt
150g/6oz Luxury dried fruit mix
Icing sugar for dusting
Mix BARKAT Flour Mix, bicarbonate of soda and salt together.
Rub the margarine into the flour until mix resembles fine breadcrumbs.
Stir in the sour milk and mix until a soft dough is formed.
Mix in the fruit.
Divide the dough into 2 equal size pieces.
Roll out the first piece of dough to fit a 20cm/8in sandwich tin and place in tin
Roll out the marzipan, slightly smaller than the dough. Place the marzipan onto the centre of the dough.
Roll out the second piece of dough to the size of the tin. Place on top of the marzipan. Seal the edges together.
Bake in the centre of the oven and set at 475f/240c for 15 minutes. Lower heat to 375f/190c and bake for a further 10 -15 minutes.
Allow to cool and dust with icing sugar.
